Since our beginning we have aimed for our own production, oak aging and sales of high quality wines. This is why we maintain fanatical control and care from the moment the grapes are picked, through the production and bottling processes, to the oak and bottle aging.
The winery’s original building, located in the center of Cafayate, was restored maintaining its exterior adobe walls in order to preserve the local identity. Inside, a modern building of 1000 square meters was built for winemaking, following the rules of ISO 9000, and it features the most modern Italian machines, stainless steel fermentation tanks, and septic cement tanks for backup. For the aging of the wines, the winery has approximately 600 American and French oak barrels.
The winemaking process begins when the grapes are hand-harvested on our estates and transported to the winery in 20 kg boxes in order to protect them. There an elevated conveyor belt is used to begin the double selection and picking process, in which 6 women manually separate the grapes from the bunches, thus achieving a higher quality of fruit.
Next the must is gently passed through a destemmer and using gravity is transported to the tanks where it will begin the fermentation process. During this process temperature is carefully regulated using sensors and panels, which allow the winemaker to follow the process step-by-step, also making use of various laboratory analyses.
Once the process is finished, in the case of the reds, the wine is placed into new oak barrels, where it will stay for a period of 8 to 12 months depending on the product.
