In our terroir the red varietals express themselves in wines of great aromatic intensity, of deep colors, intense and strong. The fundamental characteristic of the grapes can be summed up in one word: concentration. This quality allows for wines with body, personality, with the structure necessary for oak aging and later bottle aging for many years.

In the case of the Malbec the grapes end up with high total polyphenol content and at the same time a low unripe tannin content, which results in wines at the same time powerful and pleasant, as well as a touch of spiciness that distinguishes it from the Malbec of other regions.

It is an ideal region for Tannat, which is a difficult varietal to manage, since in Cafayate ripeness with the normally strong tannins significantly smoothed out is achieved, without losing the color and the full body that characterize the varietal. The reds in general have a high capacity for oak aging and aging in bottle.

The Torrontés is without a doubt the varietal that has on its own managed to express itself to the highest degree in Cafayate, assisted by its general excellent health, plus the cool nights. Together, these factors help to preserve the fresh, floral aroma and the greenish-yellow tones that characterize a good Torrontés. The cool nights and good health of the grapes also allow us to late harvest for the production of naturally sweet wines free of rot.
