Harvest Date: first week of March. Hand harvested.
Fermentation and Maceration:4 days of cold maceration, 20 days fermentation at 25C
Aging:8 months in second and tirad use French and American oak barrels
Alcohol: 14.3 %
Residual Sugar: 2.65 g/L
Acidity: pH of 3.50; TA of 6.0 g/L
